2021 Redfield/Wickson Crab

The berry-filled essence and soft tannins of Redfield combined with intense acidity and rich sugars of Wickson Crab create this cider which is full-bodied, fruit-forward and with just enough sweetness to temper its racy acidity.
In the cidery: Field blend of Redfield and Wickson Crab pressed 1 month after harvest. DV10 yeast. Bottled still after 8 months of aging. 20 Cases produced.

In your glass: Aromas of stone fruit and white grape. Mouthwatering acidity, cherry and peach.

Our “terroir” blend is made from heirloom and bittersweet apples, fermented slowly and cool.
Tasting Notes: Crisp and bone dry, with robust tannins, and flinty mineral notes.  Aromas of lime, green apple and grapefruit.

2021 RabbleRouser

A unique blend of American heirloom apples and old English bittersweets, that create its sunset aura and tropical fruit aromas. With soft tannins, light effervescence and paradoxical sweetness, RabbleRouser is perfect for parties or festive dinners.
Tasting Notes: Soft tannins, light body, and a deceptively “sweet” finish.  This cider is dry, fruit-forward, and lightly effervescent with a sunset aura and tropical fruit aromas.

In the cidery: A blend of red-fleshed apples, Wickson Crab, and heirloom sharps pressed in October and November 2021.
In the glass: White peach on the nose, strawberry, raspberry, and vanilla with tingling acidity and a fruit-filled lingering finish.

2021 Hickster 

A blend of heirloom, russet, and bittersweet apples that reflects our love of apples and hard work in the orchards. This cider aims to hit the delicate balance between sweetness and acidity while finding depth in its tannic structure. Complex, yet approachable.
Tasting Notes: Bright acidity tempered by subtle sweetness gives way to bold, earthy tannins that linger into a smooth, fruit-filled finish. Aromas of vanilla, honeydew, and russet apples.

2021 First Fling

Our fruit-forward, first-of-the-season blend, First Fling is made with our favorite early ripening apples. With a hint of sweetness balanced by a touch of tart, its tannins are soft and lingering; just perfect for afternoon sipping.
Tasting Notes:  This cider is crisp and tart, with just a touch of sweetness with aromas of passion fruit and vanilla.  Meyer lemon up front, gives way to gently lingering tannins.  Pairs well with rich foods and creamy cheeses.

2021 Black is Gold

A cider in support of racial equity and justice The BIG Project: An annual collaboration from Black Diamond Cider and Redbyrd Orchard Cider. This cider is made with love and care in support of the fight for racial equity and justice. 100% of the proceeds from BIG go to 2 local (to us) non-profit organizations whose work we admire. 
Tasting Notes:  Aromas of cinnamon. Balanced body with notes of honey

2021 Kingston Black

A varietal cider made from a traditional English bittersharp apple. Kingston Black, often displaying smoky and earthy characteristics, has long been recognized for its potential to make a balanced and complex cider all by itself.
In the cidery: Pressed a month after harvest. DV10 yeast. Secondary fermentation in the bottle after 15 months aging. Left on the lees.
In your glass: Tobacco, smoky leather, licorice, anise, molasses.

2021 Ashmead’s Kernel/Reinette Musquee 

Ashmead’s Kernel and Reinette Musquee (Margil), both classic russet apples, originated in England and France respectively in the early 1700s.  They are cherished for fresh eating as well as their cider-making qualities.  This cider exemplifies the essence of russet apples.
In the cidery: Pressed a week after harvest, co-ferment, DV10 yeast. Secondary fermentation in the bottle left on the lees.
In your glass: Spicy acidity, soft tannins, cooked peaches, dry autumn leaves, honeycomb on the finish.
Varieties: Ashmead’s Kernel 60%, Reinette Musquee 40%
Alcohol: 8.4%  Residual Sugar: 0% (Dry)

2021 Porters Perfection/Golden Russet

Golden Russet and Porter’s Perfection are heirloom cider apples originating from western New York and southwest England (respectively) in the late 1800s. Porter’s Perfection, brings acidity, tannic complexity, and depth of finish, while Golden Russet, lends spiciness and a honeycomb sweetness and its subtle russet bite. A beautiful marriage of two of our favorite apple varieties.
In the cidery: Pressed after 3 months of sweating, co-ferment.  DV10 yeast.  Bottled after 9 months of aging.
In your glass: Aromas of tart cherry, pine resin and beeswax. Goldenrod honey and spicy tannins lead to a subtly sweet finish.

2021 Geneva Tremlett’s

The identity and origin of Geneva Tremlett’s Bitter is unknown. It was imported from England for the Geneva, NY apple collection in the 1960s, thought to be the English cider apple Tremlett’s Bitter. Whatever its true name may be, Geneva Tremletts has established itself as one of the few bitter sharp cider apples that can stand on its own in the bottle. This single variety cider is cold fermented and then put through a secondary fermentation in the bottle using both wild and cultured yeasts. In the cidery: Harvested in mid-September and sweated for two months before pressing DV10 yeast. Bottled after 2 months of aging, secondary fermentation in the bottle left on the lees. In your glass: Aromas of green apples and citrus, bold tannins, racy acidity, and lingering finish.

2019 Shin Hollow

We have revived our Shin Hollow label for this bottle-conditioned cider made with Porter’s Perfection. The name Shin Hollow pays tribute to one of the old nicknames for Trumansburg (the village our farm borders) and invokes our wilder side.
In the cidery: Harvested in early November 2019 and sweated for 5 months before pressing 58W3 yeast. Bottled after 9 months of aging.  Secondary fermentation is left on the lees.  Unfiltered.  
In your glass: Lively effervescence, robust earthy tannins, and tantalizing acidity all joined together with a yeasty wild character. Butterscotch, ripe apple, leaves and earth. 
Varieties: Porter’s Perfection (85%), mixed sharps (15%)

FORTIFIED CIDER


2021 Porter’s Pommeau

A blend of fresh cider made from Porter’s Perfection – an old English bittersweet apple and oak-aged apple eau de vie – is our take on the classic beverage from Normandie, France.
In the cidery: Eau de Vie distilled from our own fruit in 2018, aged in French oak barrels for 2 years, and then blended with fresh juice from the 2021 harvest.  Further aged in stainless with French Oak chips for an additional 8 weeks, bottled July 2022.  
In the glass:  Velvety tannins and a smooth finish.  Fragrances of ripe apples, and vanilla.  
Varieties: Porter’s Perfection, Golden Russet, Dabinet, King David, Goldrush
Alcohol: 18.1%  Residual Sugar: 6.4% (Sweet)
